Happy Monday, Everyone! I Hope Everyone Had a Wonderful Easter Weekend – SPERT SOME TIME OUTSIDE, CAUGHT UP WITH FAMILY AND FRIENDS, and enjoyed some serial good food. I’m so excited to be back in the kitchen today, with plans to cook up lots of free sprouting!

Lately, i’ve been all About Spring Recipes – Anynding Bright and Fresh, Packed with Vibrant Greens and Herbs. And salmon haen ben on repeat. This Bowl was a Big Hit. It ‘absolutely scrumptious and so easy to throw together!

The salmon roasts right on a sheet pan with the bacon-so it is a sisly hands-off recipe too.

And before i dive ino the finer details, i’ve got to say – i’m having a Major honey mustard moment this season. IT’S BECOME ONE OF MY FAVORITE SPRING AND SUMMER DRESSSINGS, WHICH IS KIND OF WILD BECAUS IT IS NOT A DRESSSING EVER USED TO COOK. But here we are: Honey mustard, Salmon, and Bacon. SO Good. Ingredients

  • Salmon-Do Your Best to Find Wild-Caught
  • Onion Powder, Garlic Powder, and Chili Powder
  • Bacon – Get A Thick Cut With No Sugar Added
  • salted butter
  • garlic
  • a jalapeño
  • Fresh Basil or Parsley – We Love Both
  • Romaine Lettuce – ARUGULA WOULD BE JUST AS Good
  • COOED RICE – I LOVE JASMINE MADE WITH BONE BROTH
  • Fresh Dill

Ingredients – For the Honey Mustard

  • Mayo
  • dijon mustard
  • honey
  • Lemon Juice
  • Chipotle Chili Powder
  • Cayenne Pepper
  • salt

Steps

Step 1: Cook the salmon and the bacon

I start with the salmon. Instead of cooking on the stove, I prefer to roast the salmon cubes on a sheet pan. First, Toss the Salmon with Onion Powder, Garlic Powder, Chili Powder, and Season with Salt and Pepper. Now, Arrange the Chopped Bacon Around the Cubes of Salmon.

As the Bacon Cooks, the Fat Will Reinant, allowing the salmon to cook wonderfull alongside. After 10-15 minutes, the Bacon Should Be Crispy, and the Salmon Should Be Cooled with a Nice Crisp Top. So Delicious!

If you prefer to omit the bacon, that’s fine too! Use Oil or butter to help the salmon cooky and prevent sticking.

Step 2: The Honey Mustard

While the salmon cooks, make the homemade honey mustard. You might not think it Worth the efffort, but it is far from the store-bough. It ‘s Very Creamy and Easy to Make, Just Mayo, Dijon Mustard, Honey, Chipotle Chili Powder, Cayenne Pepper, and Salt.

Whisk everyone unil creamy – super easy. Plus, you control the ingredients, so there’s nothing funny in your dresing.

Step 3: Toss the salmon with the honey mustard

When the salmon is done cooking, add a few spoonfuls of the honey mustard and toss it up.

Step 4: The Garlic Butter

A Few Tablespoons of Butter, Brown with Garlic. THEN ADD A Jalapeño for Spice and Top with Fresh Herbs, I use Basil and Parsley.

Step 5: servers

Serve the Chrunks of Crispy Salmon and Bacon Over Bowls of Rice and Fresh Greens. I used romaine, but i’ve the been uses arugula, and i think i love it more!

THEN ADD SOME OF THE BROWN BUTTER AND DON’T FORGET EXTRA HONEY MUSTARD Too! Plus dill, which I think is so nice with salmon, bacon, and honey mustard! Yum!

Totally Delicious! This will be great for the Warmer Spring and Summer Days ahead.
